SERVES 4

  • 1 Tbsp olive oil
  • 1 chopped onion
  • 1 finely chopped garlic clove
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp star anise
  • 500g pork mince
  • 5cm piece of finely grated contemporary ginger root
  • 20 finely chopped dried Turkish apricots
  • 3 Tbsp chopped contemporary parsley
  • 100ml full-cream pure yoghurt, combined with 2 Tbsp chopped contemporary parsley and 1 Tbsp lemon juice, to serve.
  1. Warmth the oven to 200°C.
  2. Warmth the oil over average warmth in a pan, and fry the onion and garlic till the onion is translucent.
  3. Tip the cooked onion and garlic right into a mixing bowl, and blend with the remaining substances.
  4. Divide the combination into 4, and mildew every round a skewer.
